Kale Caesar Salad

gluten free - dairy free - vegan - nut free option

Our dairy free answer to the beloved Ceaser Salad; 

 

Serves 4 
Prep Time: 40 Minutes
Cooking Time: 10 Minutes

DRESSING:

  • ·1/2 cup raw cashews - soaked (or sunflower seeds for nut free)
  • 1/4 cup water (or more)
  • 2 TBS olive oil
  • 1 TBS lemon juice
  • 1/2 TBS Dijon or seeded mustard
  • 1/2 tsp garlic powder
  • 1 small garlic clove
  • 1/2 TBS gf vegan Worcestershire
  • 1.5- 2 tsp capers
  • salt & pepper to taste

OTHER BITS:

  • Washed, shredded kale & cos lettuce
  • Crispy Chickpea Croutons or homemade croutons
  • Fresh wedged lemon
  • Cashew Parmesan to top

METHOD:

  • Put all dressing ingredients into a highspeed blender and blend until smooth.
  • Place in the fridge for 30-40min to cool.
  • Wash, spin & shred your lettuce & kale SEPARATELY - you will want to massage your shredded kale with some olive oil & lemon juice before you add the lettuce.
  • Add lettuce then mix well, then add dressing and mix until all leaves are covered.
  • Top with chickpea croutons or your fave croutons & parmesan.
