Our dairy free answer to the beloved Ceaser Salad;
Serves 4
Prep Time: 40 Minutes
Cooking Time: 10 Minutes
DRESSING:
- ·1/2 cup raw cashews - soaked (or sunflower seeds for nut free)
- 1/4 cup water (or more)
- 2 TBS olive oil
- 1 TBS lemon juice
- 1/2 TBS Dijon or seeded mustard
- 1/2 tsp garlic powder
- 1 small garlic clove
- 1/2 TBS gf vegan Worcestershire
- 1.5- 2 tsp capers
- salt & pepper to taste
OTHER BITS:
- Washed, shredded kale & cos lettuce
- Crispy Chickpea Croutons or homemade croutons
- Fresh wedged lemon
- Cashew Parmesan to top
METHOD:
- Put all dressing ingredients into a highspeed blender and blend until smooth.
- Place in the fridge for 30-40min to cool.
- Wash, spin & shred your lettuce & kale SEPARATELY - you will want to massage your shredded kale with some olive oil & lemon juice before you add the lettuce.
- Add lettuce then mix well, then add dressing and mix until all leaves are covered.
- Top with chickpea croutons or your fave croutons & parmesan.
